Procedure

  1. Pre-heat the oven to 240 °C.
  2. Place the seasoned chicken atop the vegetables and insert a pricked lemon with the herbs.
  3. Put the tray in the oven and reduce the temperature to 200 °C.
  4. After 45 min, baste the chicken and add vegetables for roasting to the oven.
  5. After a further 45 min, cover the chicken with foil and rest it for 15 min.
  6. Meanwhile, make gravy and add the wings for extra flavour.
  7. Carve the chicken and serve with the roasted vegetables and gravy.
